Simple Almond Crusted Salmon

My husband and I enjoy eating fish, particularly salmon. I like cooking it in different ways to change it up and surprise my husband’s tastebuds, as long as it doesn’t require a million ingredients. Ain’t nobody got time for that! If you do, I envy you! I have a 1 year old that I can’t leave out of my sight for 2 minutes. I try to entertain her with cookies and fruit (not a very good combination), but that’s what keeps her out of my kitchen cabinets for the meanwhile.

There’s a recipe I’ve seen on the internet with a longer list of ingredients. They are probably all amazing, but the recipe I will be sharing is also very yummy, only requires 4 ingredients, and takes less than 4 minutes to prep!

Here is what you’ll need:

  • Rosemary
  • Lemon Pepper
  • Almonds (sliced or chopped)
  • Olive oil
  • 1lb of salmon

Preheat your oven to 400 degrees. Combine 1/4 cup of almonds, 1/2 teaspoon of lemon pepper, 1/2 teaspoon of rosemary,and 1 tablespoon of olive oil in a bowl to create a paste. IMG_9018Line a baking dish with foil and spray some PAM on it. Lay the salmon on the foil and spread the almond mixture all over the top.

Bake in the oven for 20 minutes and it’s done! Serve with your favorite sides.
