Summer Eats: Spice up your Hot Dog with Bacon and Pico de Gallo

July is here! That means a few things in my house: ice cream, fireworks, hot dogs, and good times. My hubby and son could eat hot dogs every day if I let them. Since hot dogs are a popular request, we have become really creative with how we eat our dogs: topped with chili, cheese, and crushed Fritos is one of my favorites, but the one that takes the cake is our bacon-wrapped hot dog with pico de gallo. Sounds pretty standard, but I’ll go over the details to make sure you’re covered!

But First, Pico

Ingredients:

  • Tomato
  • Serrano pepper(s)
  • Avocado
  • Onion (I cheat with my onions, but I’ll get to that later)
  • Cilantro
  • Salt
  • Knoor caldo de pollo granules

To begin, make sure to wash your produce. Dice your onions and avocado and place in a small bowl. Next, dice up one tomato. I like to cut the tomato in quarters and go from there. Then throw it in the bowl with the onions and avocado.

Next, the serrano pepper. If you don’t like your pico too spicy, take out the seeds and de-vein the pepper. If you like to keep it spicy, then leave it all in or add another pepper. Finely chop the pepper(s) and add to the bowl with the other ingredients.

Next comes the cilantro. This measurement is up to you. Add as much as you want or as little as you want. If you don’t like cilantro, then don’t add any at all.

Finally, some lime juice. I like a lot of lime juice in my pico de gallo,  I usually add two limes. Of course, this measurement is up to you, but don’t omit this one. The lime flavor really set the tone for the pico.

Once you have all the ingredients in the bowl, give it a good mix. Add some salt and Knorr Caldo de Pollo flavoring for some taste. All of this is for flavor, therefore the measurements are totally up to you. 

Assemble your Hot Dog!

Ingredients:

  • Bacon
  • Hot dogs
  • Hot dog buns
  • Mayonnaise
  • Dill Relish

Wrap those hot dogs in bacon and cook them in the skillet or grill, turning to make sure that all of the sides cook evenly. Then, toast the buns in the oven, and lightly dress the insides of the buns with mayo. Slap your bacon-wrapped hot dog inside the bun, add dill relish and top with your freshly made pico! This is our favorite way to eat our hot dogs! I hope you enjoy this simple recipe.

Bonus tip: When I go grocery shopping, I buy a big sweet onion. I mean, the biggest one you can find. I clean it up, cut it up in eighths, and throw it in a food processor. This way will get the onion finely chopped. I then separate and save (in the freezer) the onions for cooking later. This is how I cheat with my onions!
