Taco Bean Soup

Well, it’s official folks – fall has arrived and dare I say that the weather has gotten a tad bit milder here in the RGV (could be wishful thinking, but hey).

This is one of my all time favorite recipes! Partly because it’s the perfect balance between a soup and chili, but mainly because my grandmother use to make this and it is one of two recipes that I have written by her own hand.

So, in honor of fall and hungry bellies – I present to you my grandmother’s taco bean soup 🙂

Ingredients:

–       1 lb. ground beef

–       1 small onion

–       1 package taco seasoning (I prefer Lawry’s)

–       1 package of Ranch seasoning mix

–       2 regular size cans of diced tomatoes

–       2 regular cans of Pinto beans

–       1 can of Red Kidney beans

–       1 can of whole Kernel corn

 

Directions:

  1. Brown ground beef.
  2. Chop up 1 small onion and add to beef. Sauté.
  3. Put the beef and onion mixture into a large soup pot.
  4. Add 1 package of taco seasoning and 1 package of ranch seasoning mix. Stir.
  5. Add the following ingredients – Do NOT drain:

–       2 regular size cans diced tomatoes

–       2 cans pinto beans

–       1 can red kidney beans

–       1 can whole kernel corn.

  1. Cook until well blended and stir often.

Garnish with some shredded cheese and some tortilla chips and enjoy!
