Kick-Off Football Season with this Easy Seven Layer Dip Recipe

In my house we are anxious and counting down the days until football season officially kicks off.  You see, the kick-off of football season means the start of many great viewing parties.  I am thrilled about the next few months and all of the excitement that comes with gatherings of family and friends and rooting for our favorite teams.  I love college football (Hook ’em Horns) and Mike loves college and NFL.  He is a HUGE Dallas Cowboys fan and I am not!  The Texas Longhorns seem to be the only team we both agree on when it comes to sports.  The fact that we don’t root for the same teams usually makes things a bit more interesting, to say the least.

To keep the peace in our home during Cowboys games, I always try to have good food we can snack on to help keep our comments about each others’ choice of teams to a minimum.  Our favorite dish is a seven layer dip that I made my own.  It was a hit the first time and has been ever since.  I’ve listed the recipe below and encourage you to try it for you next party.  Try it as is or change it up to your liking.  I’m sure it will earn some points!  We hope you enjoy this season and good luck to your teams!

SEVEN LAYER DIP

Prep Time: 15 Minutes

Ready In: 15 Minutes

Yields: 15 Servings

 

Ingredients:

1 1/2 pounds of ground beef

1 (16 ounce) can of refried beans

4 cups shredded cheese (I use the Mexican Blend)

1 (8 ounce) container sour cream

1 cup guacamole (I make my own but you can buy it at the store)

1 cup salsa (I use Julio’s salsa- a legend made here in Texas!)

1 (6 ounce) can black olives, chopped

1 (6 ounce) can nacho jalapeños

1/2 cup chopped tomatoes

1/2 cup chopped green onions (I prefer to use sweet onions)

Directions:

– In a large skillet, brown ground beef. Set aside to drain and cool to room temperature

– Spread the beans into the bottom of a 9×13 inch serving dish that is about 1/2 inch deep OR in a round bowl (It’s easier to spread in a 9×13 serving dish)

– Sprinkle 2 cups shredded cheese on top of beans

– Sprinkle beef on top of cheese

– Spread sour cream very slowly on top of beef

– Spread guacamole on top of sour cream

– Pour salsa over guacamole and spread evenly

– Sprinkle remaining shredded cheese

– Sprinkle black olives, tomatoes, onions, and jalapeños on top

*You can serve this dish immediately, or refrigerate it overnight and serve cold.  We prefer it at room temperature.
