Tell us a little bit about you:

I recently moved to the Rio Grande Valley from Atlanta, where I lived for a little over 10 years; I actually grew up in a small town in Oklahoma. My husband, Jaime, and I have two boys, 11 and 7, and our dream is to start our little homestead here in south Texas. As for work, I’m a holistic nutritionist, and helping people find healing through food is my passion. My goal is to become Board Certified in holistic nutrition and continue to teach about the importance of eating healthy.

Finish this sentence: “You’d never guess that I…”

As a holistic nutritionist, you’d never guess that I enjoy a little (organic) wine now and then.

Describe your ideal day.

An ideal day for me would be simple yet meaningful. A stroll with my kiddos and hubby, then enjoying a meal over laughter at our favorite hangout, singing silly songs in the car, and then enjoying a good movie with homemade popcorn.

Name three must-haves and why.

My three must-haves are: 1) a good book 2) good food and 3) good friends.

My dad taught me that learning is life-long, so I always carry a good book to nourish my mind. My ill-health years ago led me to value good food in order to nourish my body. Lastly, good friends who make me laugh will always nourish my soul.

What do you miss most about life before kids?

I miss spontaneous outings, fancy dinners, traveling, and actually sleeping next to my husband. And, I might add, I miss choosing what movie to watch on movie nights.

In three words, what kind of mom are you?

Simple, devoted, determined.

Anything else fun we should know?

I’ve only sung karaoke once, but I loved it. And I love trying new restaurants and foods, as well as learning about different cultures. I’m a very curious person and enjoy learning about how other people live, the foods they eat and their traditions.

  1. Hi Melissa! I am one of the coordinators with Brownsville MOPS (Mother’s of preschoolers) and we were wondering if you would be interested in coming and speaking to our group. We have about 40-50 moms that come to each meeting. Let me know! Thanks!
