This year has brought with it many firsts for my little family … I’m talking a new school for my little man. More involvement with the school and staff on my part – and I am loving it! A new routine (for all of us!). And baseball! BASEBALL!!
And let me tell you a little something about baseball that I did not know … ok, I kind of had an idea from hearing about my friends’ schedules with their kiddos in baseball. But it’s just one of those things – you don’t really know … UNTIL YOU KNOW! We are talking practice every day! And games as late as 8:00 PM.
Now I know that doesn’t sound late to much. But 8 o’clock is our cue to start rounding up our little man and get him to start his nightly routine – and hopefully get him in bed by 8:30. HOPEFULLY!
Well 8 o’clock games just doesn’t give that 8:30 bedtime a fighting chance. Nope! Not one bit.
It’s evenings like these (especially the school nights) that I’m always looking for a quick and easy dinner. And tasty too!
These Cheesy Beef Taco Melts are one of my favorite recipes to fall back on when time is of the essence.
Interested yet?! To try it out, gather the following ingredients:
1 pound … Ground Beef
1 package … 1 oz. Taco Seasoning Mix (I used Old El Paso) ←has Box Tops!!
1 cup … Think and Chunky Salsa (I used Pace)
1 can … 16.3 oz Pillsbury Grands! Biscuits ←has Box Tops!!
1 package … 8 oz. Mexican Blend Cheese − you only actually use (1 cup) half of the bag
Note: You can definitely substitue different cheeses, or taco seasoning, or salsa, or even the biscuits. Whichever brand catches your interest at the time. Or that you have on hand. I have used regular cheese slices, and cut up into thick strips before when no other options present themselves. You can really play with it. I have even added corn to the meat {which just crossed my mind as I was gathering the ingredients}!
Now for some cooking …
Preheat the oven to 350 degrees (or as stated on the can of biscuits you are using).
Start browning the ground beef.
As you wait for the meat to brown (mixing here and there), open up that can of biscuits and start spreading them open like a tortilla.
{I like to leave the open can in the refrigerator, and get one biscuit out at a time…the biscuits are easier to work with when they are at a cooler temperature.}
Flatten them out, and stack them on a plate inside the refrigerator until it is time to stuff them.
Once browned, drain any grease from pan and Taco Seasoning Mix. Mix The instructions call for 2/3 cup of water – but I always opt out. It gives the meat a thicker consistency.
Once the meat is cooked, and the seasoning is mixed in, add the cup of salsa to the meat and mix it all together.
Grease a cookie sheet.
Now get those flattened biscuits out, one at a time, and serve 1/3 of a cup of the meat mixture onto it’s center. Top that with some cheese. Then close up the biscuit. Place it on the cookie sheet, and move on to the next…until you fill all the biscuits.
Place them in the oven for 13 – 17 minutes. Or, if you are using a different brand of biscuits, follow the instructions on the can.
Take them out once they are a golden brown {like you would as if you were making biscuits}.
Mmm!! Now serve these good little treats with a side of rice, and you are ready to sit down and enjoy one quick and tasty meal!
