Fresh and Fruity

Chances are you have all of the three ingredients to make this refreshing, fruity, drink in your refrigerator right now. I make this during the summer time and we enjoy it as beverage or as a frozen treat.

Here’s what you need:

  • 1/2 a seedless watermelon
  • 1 cucumber
  • 6 strawberries
  • 2 tbsp of your sweetener of choice

Remove rind from watermelon, hull your strawberries or simply cut off tops, and peel cucumbers.

Then run all fruits and vegetable through your juicer.

If you do not have a juicer, you can blend it in your blender until it is completely liquified. If you use your blender, strain the mixture to remove the fleshy fruit bits and/or seeds.

Next, add your sweetener of choice and mix well. It’s perfectly sweet on its own if you want to keep it natural and sugar-free. I used 2 tablespoons of xylitol, but you can certainly use stevia, sugar, or honey.

Finally, you can serve over ice and enjoy it immediately or you can freeze the fruit mixture and serve it in bowls as light, refreshing, treat.

Also, you can make this an adult beverage by adding Watermelon Pucker or another light spirit.

I’ve frozen it in a gallon sized ziplock bag and thrown it in the ice chest for a trip to the beach.

When we were ready to enjoy it the frozen juice had a nice slushy consistency which was perfect as a light pick me up in between sand castle building and swimming.
